Mim Seidel is a registered dietitian with a Master’s degree in Nutrition. Her areas of expertise include public health nutrition and principles; chronic disease prevention and wellness; translational research and program planning and development. Professionally, Mim has focused on public health and under-served communities. Among other positions, she was a WIC Coordinator in Syracuse and Manager of the Chronic Disease Prevention Program at the Allegheny County Health Department in Pittsburgh where she assessed disease rates and implemented programs to address the needs. Most recently, Mim completed a research intervention to increase utilization of WIC farmers' markets checks. Previously, she was the PI of an urban and rural diabetes prevention program in SW PA. Mim’s interest in and commitment to access to food and food system issues is shown in her past an present volunteer experiences which include: membership in the Onondaga County (Syracuse) Food System Council; Mayor’s Food Policy Commission (Pittsburgh); SW PA y Food System Council; board member of Just Harvest: board member of Greater Pittsburgh Community Food Bank; member of the Pittsburgh Food Policy Council. As a board member of the Food Bank, and chair of its Food and Nutrition Committee she was instrumental in moving the Food Bank to look at quality as well as quantity of food by contributing to and promoting the development and use of the Choose Healthy Options Program (CHOP).
